started...

Morning Glory

Ingredients:

- ½ cup quinoa

- ½ avocado

- 1 handful of lettuce or kale, or both

- 2 eggs sunny-side up

- 3-4 baby carrots cut

- ½ tomato cut

- sprinkle of feta cheese crumbles

- small pinch of salt & pepper

- 2-3 tsp lemon juice

- as much olive oil as your heart desires!

Cooking Quinoa...

There are multiple ways to cook quinoa! You can purchase it at the grocery store in a box that comes with directions.

If you don’t want to go that route you can do the following:

- Place ½ cup of quinoa in a saucepan with 1 cup of water

- Bring to a boil

- Let cook until tails are visible

- Once tails are out, put in fridge to cool

Prepare!

1. Cook the quinoa and cool it in the fridge. Cook the eggs.

2. Wash and cut up the veggies. If you want the veggies roasted you can throw them in the oven on a cookie sheet with some olive oil & minced garlic and broil them.

3. Assemble the goodies in a bowl, add your oils and juices, and enjoy!
